Roseane M. Santos got her PhD at State University of New York at Buffalo. She now runs a research unit on Coffee & Health at the Department of Pharmaceutical Sciences, School of Pharmacy, South University in Savannah, GA - www.southuniversity.edu. Today many doctors and consumers give attention to other compounds found in coff ee, rather than caffeine. Dr. Santos major interest is on the other bioactive compounds found in coffee as the chlorogenic acids, lactones, niacin and minerals and the effect upon human health. She also works in the development of healthy byproducts from coffee, such as functional and fortified coffee. Darcy R. Lima got a PhD in Medicine and Post-Doc on History of Medicine in London at Saint Bartholomew's Hospital (1123). It was there that Harvey (1628) provided evidence about the circulation of the blood. Curiously he loved coffee. Darcy studies coffee and its effects on human pleasure, heart and brain since the 80's. By the 90's he raised a controversy: "Coffee is not only caffeine and is good to health". His ideas gave birth to international projects such as the Coffee at Schools Breakfast, Coffee Heart Study and the Institute for Coffee Studies at Vanderbilt University.
